These sweet potato and beef breakfast taquitos are the perfect easy and filling breakfast! They’re egg-free, grain-free, and easy to make into a freezer meal.

Breakfasts can be challenging if you’re grain-free or egg-free, especially fast breakfasts. Egg muffins or breakfast sandwiches seem like the perfect quick breakfast solution… that is until these freezer breakfast taquitos entered the picture.

These breakfast taquitos are made with sweet potato and beef and are totally egg-free and grain-free. Prep them ahead of time, freeze them, air fry or bake them when you’re ready, and enjoy a quick and fresh breakfast!

The Ingredients for the Sweet Potato and Beef Breakfast Taquitos

  • Ground Beef. You can also use ground turkey or chicken!
  • Onion. 
  • Avocado Oil, Salt, and Pepper. Omit pepper for AIP.
  • Sweet Potato.
  • Garlic Powder, Oregano, Fresh Cilantro, and Lime. These add great flavor to the sweet potato and beef filling!
  • Grain-Free Tortillas. I always use Siete almond tortillas (thanks for sending me some, Siete!) see notes below for AIP. Thanks for sending me some, Siete!
  • Avocado Oil Spray. Spraying the taquitos with avocado oil helps them get crispy!
  • Red Onion, Cilantro, Cilantro Avocado Sauce, or Fresh Lime Juice. All great options for toppings! I love this cilantro avocado sauce!

How to make Sweet potato and Beef Breakfast Taquitos in the oven

  • Make the filling. Preheat a large skillet and add the ground beef, onion, and season with salt and pepper. Crumble the ground beef until browned. Set aside. Using the same pan, heat the avocado oil and saute the sweet potato for 8-10 minutes or until fork tender. Add the ground beef back to the pan and season with salt, pepper, garlic powder, oregano, fresh cilantro, and lime juice. Stir to combine.

  • Roll into taquitos. Heat the tortillas for about 5-10 seconds to make them more pliable. Spoon about 2 spoonfuls of the beef and sweet potato mixture. Roll into a tight taquito and transfer to the baking sheet. Repeat with all of the tortillas. Spray with avocado oil spray.
  • Bake the taquitos in the preheated oven (or air fryer) and serve with toppings of your choice.

How to make Freezer Taquitos in the air fryer

  • Spray the taquitos with avocado oil spray and add to the air fryer basket.
  • To make in the air fryer cook at 370 for 6-8 minutes, or 9-10 minutes if frozen, or until crispy.

How do you make this recipe into a freezer meal? How do you reheat it?

  • Cook the filling and allow it to cool fully.
  • Roll into taquitos tightly.
  • Once totally cooled, freeze in freezer bags or parchment loaf pans. Freeze for up to 1-2 months.
  • Bake in the preheated oven or air fryer as directed (with a few extra minutes if they’re still frozen)
  • Top with toppings of your choice.

  • 1/2 lb ground beef
  • 1/2 onion, diced
  • Salt and pepper to taste (omit pepper for AIP)
  • 2 tbsp avocado oil
  • 1 large sweet potato, diced
  • 2 tsp garlic powder
  • 1 tsp oregano
  • 1 tbsp fresh cilantro
  • Juice of half a lime
  • 8 grain-free tortillas (I use Siete almond tortillas, see notes for AIP)
  • Avocado oil spray

Instructions

  1. Preheat the oven to 400 F and line a baking sheet with parchment paper.
  2. Preheat a large skillet and add the ground beef, onion, and season with salt and pepper. Crumble the ground beef until browned. Set aside.
  3. Using the same pan, heat the avocado oil and saute the sweet potato for 8-10 minutes or until fork tender. Add the ground beef back to the pan and season with salt, pepper, garlic powder, oregano, fresh cilantro, and lime juice. Stir to combine.
  4. Heat the tortillas for about 5-10 seconds to make them more pliable. Spoon about 2 spoonfuls of the beef and sweet potato mixture. Roll into a tight taquito and transfer to the baking sheet. Repeat with all of the tortillas. Spray with avocado oil spray.
  5. Bake the taquitos in the preheated oven for 15 minutes or until crisp (see notes for air fryer instructions)
  6. Serve warm topped with toppings of your choice.

Notes

  • For AIP, use homemade tortillas or 4 Siete burrito-sized tortillas that are halved. These are available in stores. 
  • To make in the air fryer cook at 370 for 6-8 minutes or until crisped to your liking.
